Presumably, the cordon bleu cutlet was originally a Swiss recipe, it was veal schnitzel inside which a pocket was made into which cheese and ham were put, then dipped schnitzel in an egg, crushed in breadcrumbs and fried in butter. The name of this dish (translated as a blue ribbon) has several legends, according to one of them, the French king Louis XV awarded the Order of St. Louis (he was worn on a blue ribbon) to his favorite chef Madame Dubarri, since then all good cooks and dishes were jokingly awarded this the order. Now, instead of veal, chicken breasts or turkey meat are used.
